Bite-sized eggplant pizzas

Method

  1. Lightly brush 1/2 inch thick eggplant slices with oil and sprinkle with salt, then bake at 350°F for 15 minutes.
  2. Top with Mutti® Sauce for Pizza, mozzarella, and sliced Mutti® Cherry Tomatoes (Ciliegini), drained.
  3. Bake for another 10-15 minutes.
  4. Top with fresh basil before serving.
