One Pan Chicken and Chickpeas with Tomatoes: Method
- Preheat the oven to 180C/350F fan forced.
- In the frying pan, brown the chicken. To expedite the browning process, make sure the chicken has been dried, and salted.
- Once the chicken has been browned, take the chicken out of the pan and add the onion, chickpeas, herbs and spices, the Mutti Organic Peeled Tomatoes, and combine. For a smoother sauce, press the tomatoes into the desired consistency.
- Pour the mixture into a baking tray, and nestle the chicken pieces evenly across the tray.
- Place in the oven for about 35-40mins until the chicken is at least 74 degrees at its thickest part, or until the juices run dry.
- Take out of the oven and rest for 5 minutes and then garnish with fresh parsley and the juice of a freshly squeezed lemon.
- Serve with rice, potato, or sides of your choice. Greek yoghurt makes an excellent condiment.
