Ingredients

  • 5 chicken marylands (thigh and drum) or up to 8-10 thighs or drums
  • 1 diced white onion (chopped)
  • 1 400g can drained chickpeas
  • 2/3 tbsp ground garlic
  • 1 tbsp dried oregano
  • 3 tbsp smoke paprika
  • 1 tbsp ground cumin
  • 1-2 400g cans Mutti Organic Peeled Tomatoes
  • fresh parsely
  • fresh lemon
  • salt & pepper
  • neutral cooking oil
  • greek yoghurt (optional)

One Pan Chicken and Chickpeas with Tomatoes: Method

  1. Preheat the oven to 180C/350F fan forced.
  2. In the frying pan, brown the chicken. To expedite the browning process, make sure the chicken has been dried, and salted.
  3. Once the chicken has been browned, take the chicken out of the pan and add the onion, chickpeas, herbs and spices, the Mutti Organic Peeled Tomatoes, and combine. For a smoother sauce, press the tomatoes into the desired consistency.
  4. Pour the mixture into a baking tray, and nestle the chicken pieces evenly across the tray.
  5. Place in the oven for about 35-40mins until the chicken is at least 74 degrees at its thickest part, or until the juices run dry.
  6. Take out of the oven and rest for 5 minutes and then garnish with fresh parsley and the juice of a freshly squeezed lemon.
  7. Serve with rice, potato, or sides of your choice. Greek yoghurt makes an excellent condiment.
