The intense essence of the tomato

Mutti® Double Concentrated Tomato Paste (Doppio Concentrato) was the first product introduced by the Fratelli Mutti company in 1899.  In 1951, Mutti was the first to pack tomato paste into a tube, a significant innovation at the time. Great tasting, long lasting, and with a cap that could be used as a thimble, it became a favorite amongst Italian families. The tomato paste is ideal for giving extra colour, flavour, and texture to dishes. It is especially suitable for dishes needing very long cooking times such as ragùs, stews and one-pot wonders. It is also ideal for short cooking time meals such as when preparing a sauce à la volée for pasta or sauces, and for side sauces. For 1 kg of Tomato Paste you need 5.5 kg of fresh tomatoes.

How is it made?

After the selection phase, the best tomatoes are crushed and heated to about 65°C. The juice is separated from their skin, seeds, and cellulose by centrifugal force.

Sealing is carried out by vacuum evaporation in stainless steel containers. The temperature of 65°C helps to preserve the taste characteristics of the product before moving to the pasteurization stage.

The paste is ready to be packed after it is first heated to about 92°C to ensure microbiological stability. Empty packs are steam treated to remove impurities. After filling, they are cooled with water.

Cooperation with WWF Italy

Mutti has worked closely with the WWF in Italy to help farmers find sustainable ways to reduce their water consumption and CO2 emissions. The Italian WWF not only set goals, but it also allowed farmers to analyze and review data to identify what they can do. For example, the organization recommended the use of special sensors that recognize the moisture content of the soil and provide useful information to support efficient water use.

Mutti invested in technology, education, and technical support for farmers and agricultural organizations. Even after our five-year project came to an end, we are still as committed as ever to minimizing our environmental impact and improving every step of our production.
