SPAGHETTI ALL’ASSASSINA: Method

  1. Bring a liter of water to a boil, adding three tablespoons of Concentrato (Tomato Paste) and salt.
  2. In a pan, heat the oil, add the minced garlic and chili pepper. Sauté for a few minutes, then add the Passata (Strained Tomatoes) and a pinch of salt. Cook for 2 minutes.
  3. Add the uncooked spaghetti to the pan and spread them out with a wooden spoon so they can absorb the flavors. Let them stick to the pan over medium heat.
  4. As soon as they stick, flip them using tongs and start cooking by pouring ladles of boiling red broth. From this moment on, do not stir the spaghetti anymore.
  5. After about 15 minutes,the Spaghetti all'Assassina are ready.
