SPAGHETTI ALL’ASSASSINA: Method
- Bring a liter of water to a boil, adding three tablespoons of Concentrato (Tomato Paste) and salt.
- In a pan, heat the oil, add the minced garlic and chili pepper. Sauté for a few minutes, then add the Passata (Strained Tomatoes) and a pinch of salt. Cook for 2 minutes.
- Add the uncooked spaghetti to the pan and spread them out with a wooden spoon so they can absorb the flavors. Let them stick to the pan over medium heat.
- As soon as they stick, flip them using tongs and start cooking by pouring ladles of boiling red broth. From this moment on, do not stir the spaghetti anymore.
- After about 15 minutes,the Spaghetti all'Assassina are ready.
