Honey Chicken Nuggets with Tomato Relish

honey corn flakes, crushed

For the tomato relish

400g Mutti Polpa Finely Chopped Tomatoes

brown onion, chopped

brown sugar

apple cider vinegar

Honey Chicken Nuggets with Tomato Relish: Method
- Whisk eggs and set aside in a bowl. Crush corn flakes in a separate bowl. In a third bowl, add the flour.
- Place a piece of chicken in the flour, then coat with egg and the cornflakes. Repeat till all chicken has been coated.
- Place on a baking tray and spray the chicken nuggets with olive oil spray. Place in a pre-heated over on 180c for 20 minutes.
- To make the tomato relish, use a non-stick pot and place on a medium heat. Add all the ingredients for the relish and bring to a simmer.
- Cook down for approx. 30 minutes or till thickened. Use a stick blender and blend till desired consistency. Allow to cool and serve with nuggets.
