  • 2 Tbsp. olive oil
  • 1 large onion (chopped)
  • 4 cloves garlic (chopped)
  • 2 lbs. ground beef
  • 2 Tbsp. ground cumin
  • 2 Tbsp. dried oregano
  • 2 tsp smoked paprika
  • tsp ½cayenne pepper
  • 2 cans or 1 can Mutti® Finely Chopped Tomatoes (14 oz., 28 oz., Polpa)
  • cup ½ beef stock
  • 1 can kidney beans
  • 1 can sweet corn
  • Salt and pepper to taste
  • Handful of chopped fresh parsley

Optional for garnish:

  • Watercress or more fresh parsley
  • Sliced jalapeno
  • Tortilla chips

  1. Heat the olive oil in a large pan over medium heat. Add the onions and sauté until lightly golden, 2 to 3 minutes. Add the garlic and cook another minute.
  2. Add the ground beef; sauté until fully cooked and no pink shows at all in the meat (about 8 minutes).
  3. Add the cumin, oregano, paprika, and cayenne pepper and cook, stirring about 2 minutes.
  4. Add the tomatoes, beef stock, beans and corn. Season to taste with salt and pepper, stir in the parsley, and bring to a simmer over low heat.
  5. Cook, stirring occasionally, until the chili thickens slightly, about 1-1⁄2 hours.
