creamy soup with Passata tomato, shrimps and ginger: Method
- Mix all the dried spices from the ingredients list for the cream soup in a bowl and set aside.
- Heat 2 tablespoons of extra virgin olive oil in a saucepan. Add the chopped vegetables and sauté for 3-4 minutes.
- Add the spices and cook everything while stirring for another 2 minutes. Add the fresh ginger and chili sauce and sauté for another 3 minutes.
- Add the Passata (Strained Tomatoes), salt and bread and simmer for 4 minutes.
- Purée with an hand blender until a homogeneous, smooth cream soup is created.
- Add vegetable broth and cream, bring everything to the boil and then simmer for about 5 minutes.
- Meanwhile, heat 2 tablespoons of extra virgin olive oil in a non-stick pan. Press the garlic.
- Add garlic and curry powder to the pan and sauté for 1 minute. Remove the garlic and add the shrimp tails (remove the shell first).
- Increase the heat, fry the shrimp tails for a few minutes and deglaze with gin. Once the liquid has boiled down, add salt and pepper.
- Pour the cream soup into soup plates/bowls, add the fried shrimps and serve with black sesame seeds.
