Ingredients

FOR THE CREAM SOUP

  • 600 ml Passata (Strained Tomatoes)
  • 3 tablespoons chopped vegetables (celery/carrot/onion)
  • 2 tablespoons freshly grated ginger
  • 1 teaspoon cumin
  • 1/2 teaspoon turmeric
  • 1 teaspoon coriander
  • 1/2 teaspoon cardamom
  • 1/2 teaspoon ground pepper
  • 1 teaspoon chili sauce
  • 3 slices bread (without crust)
  • 350 ml vegetable broth
  • 2 tablespoons fresh cream
  • extra virgin olive oil
  • salt

FOR THE SHRIMP

  • 18 Shrimp tails, shells removed
  • 1 clove of garlic
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon curry powder
  • 1 tablespoon gin
  • salt and pepper

TO SERVE

  • Black sesame

creamy soup with Passata tomato, shrimps and ginger: Method

  1. Mix all the dried spices from the ingredients list for the cream soup in a bowl and set aside.
  2. Heat 2 tablespoons of extra virgin olive oil in a saucepan. Add the chopped vegetables and sauté for 3-4 minutes.
  3. Add the spices and cook everything while stirring for another 2 minutes. Add the fresh ginger and chili sauce and sauté for another 3 minutes.
  4. Add the Passata (Strained Tomatoes), salt and bread and simmer for 4 minutes.
  5. Purée with an hand blender until a homogeneous, smooth cream soup is created.
  6. Add vegetable broth and cream, bring everything to the boil and then simmer for about 5 minutes.
  7. Meanwhile, heat 2 tablespoons of extra virgin olive oil in a non-stick pan. Press the garlic.
  8. Add garlic and curry powder to the pan and sauté for 1 minute. Remove the garlic and add the shrimp tails (remove the shell first).
  9. Increase the heat, fry the shrimp tails for a few minutes and deglaze with gin. Once the liquid has boiled down, add salt and pepper.
  10. Pour the cream soup into soup plates/bowls, add the fried shrimps and serve with black sesame seeds.
