Tomato Soup with Irish Cheddar Grilled Cheese: Method
Tomato Soup
- Heat a large dutch oven or heavy bottomed pot over medium-high heat.
- Add olive oil and chili flakes. Once oil is hot, add shallots. Saute for 2-3 minutes before adding garlic. Cook until garlic is fragrant. Approximately 1 minute. Add dried basil and stir to coat.
- Add both jars of Passata (Strained Tomatoes). Add 2 tbsp water to both jars. Add lids and shake vigorously to loosen up any leftovers. Add to the pot.
- Pour in broth and stir. Bring to a boil, reduce heat to medium-low and cook for 10 minutes.
- Stir in cream. Season with salt and cracked pepper.
Irish Cheddar Grilled Cheese
- Heat a large cast-iron over medium-high heat. Add butter. Melt the butter and add bread.
- Toast the bread on one side, flip and add cheese to the toasted side. Place the second piece of bread on the cheese.
- Carefully place a heavy pot or pan to the sandwich and cook for 2-3 minutes until golden brown. Flip and do the same on the second side.
- Enjoy with a bowl of tomato soup!
