Tomato Soup Ingredients

  • 3 tbsp Olive oil
  • a pinch of Chili flakes
  • 1 Shallot (sliced)
  • 3 cloves garlic (minced)
  • 1 tsp dried basil
  • 2 jars Mutti Strained Tomatoes (Passata)
  • 3 cups Broth of choice
  • 1/2 cup cream
  • Sea salt and cracked pepper (to taste)

Irish Cheddar Grilled Cheese Ingredients

  • 1/4 cup salted butter
  • 2 slices of sourdough bread
  • 1/3-1/2 cup shredded Irish Cheddar

Tomato Soup with Irish Cheddar Grilled Cheese: Method

Tomato Soup

  1. Heat a large dutch oven or heavy bottomed pot over medium-high heat.
  2. Add olive oil and chili flakes. Once oil is hot, add shallots. Saute for 2-3 minutes before adding garlic. Cook until garlic is fragrant. Approximately 1 minute. Add dried basil and stir to coat.
  3. Add both jars of Mutti Strained Tomatoes. Add 2 tbsp water to both jars. Add lids and shake vigorously to loosen up any leftovers. Add to the pot.
  4. Pour in broth and stir. Bring to a boil, reduce heat to medium-low and cook for 10 minutes.
  5. Stir in cream. Season with salt and cracked pepper.

Irish Cheddar Grilled Cheese

  1. Heat a large cast-iron over medium-high heat. Add butter. Melt the butter and add bread.
  2. Toast the bread on one side, flip and add cheese to the toasted side. Place the second piece of bread on the cheese.
  3. Carefully place a heavy pot or pan to the sandwich and cook for 2-3 minutes until golden brown. Flip and do the same on the second side.
  4. Enjoy with a bowl of tomato soup!
