Tomato puff pastry trees: Method

  1. Start by seasoning the tomato passata with olive oil and salt.
  2. Roll out the first puff pastry sheet and evenly spread the tomato passata and plant-based grated cheese on top.
  3. Lay the second puff pastry sheet over the first one, ensuring the edges align perfectly.
  4. Using a smooth-edged pastry wheel, cut the layered pastry into strips approximately 2 cm wide along the long side.
  5. Take a strip and fold it into an accordion shape. The base should be wider, and the top narrower to resemble a tree shape.
  6. Insert a skewer through the center of the tree, starting at the bottom and ending at the top.
  7. Place the trees on a baking tray lined with parchment paper, leaving a small gap between each one.
  8. Bake in a preheated static oven at 200°C (390°F) for 20–25 minutes or until golden brown.
