Mediterranean Barley Salad with Mutti Red Pesto and Feta: Method
- Bring water to a boil and cook the barley using the following ratio: 750 ml of water for every 75 g of barley. Cook for about 25 minutes, or use pre-cooked barley for a quicker option. Season with salt towards the end of cooking.
- Drain the barley and transfer it to a serving bowl. Dress with a drizzle of extra virgin olive oil and the Mutti Red Pesto. Crumble in the feta and toss gently to combine.
- Finish with extra crumbled feta and a few fresh basil leaves, then serve.
