They are soft and succulent yet maintain their form well. As the skin of Mutti Cherry Tomatoes has a thin texture, they are ideal to make quick, delicious sauces or even to use straight out of the tin in place of fresh tomatoes.

Ingredients

  • 400 g can of Mutti cherry tomatoes
  • 150 g of goats cheese
  • 50 g of natural yoghurt
  • 1 tbsp of lemon juice
  • 40 g of fresh basil, finely chopped
  • 20 g of fresh dill, finely chopped
  • 5 g of red pepper flakes
  • 100 ml of olive oil
  • Sea salt & pepper
  • To serve: bread of your choice, toasted

Method

  1. Blend the goats cheese, yoghurt and lemon juice together with either a whisk or hand held mixer until it is smooth and creamy, spoon it into a serving bowl and set aside.
  2. Combine the basil, dill, red pepper flakes and olive oil in a small jar, shake vigorously, until well combined and then drizzle the mixture over the cheese. Season with sea salt and pepper.
  3. To serve, slather a spoonful of herbed goats cheese over toasted bread and top with Mutti cherry tomatoes.
