Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon extra virgin olive oil
  • 2 tablespoons instant yeast
  • 1 tablespoon salt
  • 1 cup Mutti Marinara Pasta Sauce
  • 1 1/4 cup shredded cheese of your choice
  • 1 cup pitted olives
  • t.t. semolina flour
  • as needed water

Stuffed Focaccia with Tomato Sauce: Method

  1. First, prepare the dough. In a medium bowl, combine the flour, instant yeast, salt, water and olive oil. Start mixing with a spoon, then knead by hand for a few minutes until the dough comes together. Divide the dough into two equal pieces, cover, and let rest for 30 minutes.
  2. Lightly dust your work surface with semolina flour. Using a rolling pin, roll each portion of dough into a thin sheet, about 1/8 inch thick.
  3. Drizzle a little olive oil into a 11–12 inch non stick skillet and lightly dust it with semolina flour.
  4. Lay the first sheet of dough in the skillet. Spoon the Mutti Marinara Pasta Sauce evenly over the surface, then add the cheese (and olives if you like). Place the second sheet of dough on top and seal the edges well, folding them slightly inward.
  5. Cook over low heat for 7 minutes. Lift an edge to check if the bottom is golden. Brush the top with a little olive oil and sprinkle with semolina flour. Flip the focaccia using a lid to help, then cook for another 7 minutes until golden and crisp.
