Pumpkin Mini Pizzas with Tomato Sauce: Method
- First, rinse the squash under running water and dry it well with a clean cloth.
- Cut into slices about ½ inch thick (you should get about 12 slices) and place them on a baking sheet lined with parchment paper.
- Brush the tops of the squash slices with extra-virgin olive oil, season with a pinch of salt, and bake at 400°F for 20 minutes.
- Remove the squash from the oven and top each slice with a generous spoonful of Mutti Tomato & Basil Pasta Sauce and the meltable plant-based cheese.
- Return to the oven and bake for another 10 minutes, or until the cheese has melted.
- Once ready, serve the Pumpkin Mini Pizzas hot, garnished with a small sprig of rosemary.
