Ingredients

  • 2 tablespoons vegetable oil
  • 2 onions, finely chopped
  • 4 cloves garlic, minced
  • 1 g 400 tin Mutti Peeled Tomatoes
  • 3 cups vegetable stock
  • 1/4 cup Mutti Double Concentrated Tomato Paste
  • pinch Generous sea salt
  • Ground black pepper, to taste

Easy tomato soup made with peeled tomatoes: Method

  1. Heat oil over medium heat in a saucepan.
  2. Cook onions and garlic stirring for 5 minutes.
  3. Add tomatoes, vegetable stock, tomato paste and pepper.
  4. Bring to a boil then reduce heat and simmer for 15 minutes or until slightly thickened
  5. Puree with a hand stick blender or ordinary blender.
  6. Serve warm with a melted cheese toasted sandwich.
