  • Sourdough Bread
  • Olive Oil
  • Soft Goat’s Cheese (optional)
  • 400 g Mutti Cherry Tomatoes
  • Fresh Basil
  • Salt/Pepper to taste

Method

  1. Preheat grill pan, slice sourdough bread and drizzle with olive oil. Grill the bread in the pan until both sides are golden and crispy, adding extra oil if required.
  2. Meanwhile in a saucepan heat up the Mutti Cherry Tomatoes and season to taste. Do not allow to boil.

To assemble the crostini:

  1. Spread a thick layer of soft goat’s cheese (optional), add a spoonful of the warm tomato topping, sprinkle with some freshly crushed black pepper, decorate with some fresh basil leaves and drizzle with extra virgin olive oil if desired.
