  • 1 onion
  • 4 green jalapeños
  • 1 tbsp olive oil
  • 100 g chorizo sausage
  • 1 tin of lima beans (butter beans)
  • 1 tin of Mutti Cherry Tomatoes (400 g)
  • salt (coarsely ground black pepper)
  • fresh coriander
  • 1 avocado
  • 4 eggs
  • 4 large corn or wheat tortillas or potato flatbreads
  • 140 g crème fraîche

Huevos rancheros with cherry tomatoes: Method

  1. Deseed the jalapeños and chop them along with the onion. Put into a frying pan and sauté until translucent. Add the sliced chorizo, drained and rinsed beans, and both the Mutti Cherry Tomatoes and their juice into the pan. Season with salt and coarsely ground black pepper. Let stew for 5 minutes. Garnish with chopped fresh coriander.
  2. Slice the avocado. Put a little bit of cooking oil into a (pancake) frying pan and fry the eggs sunny side up.
  3. Warm the tortillas and serve together with the bean sauce, avocado, eggs and crème fraîche for a Mexican-inspired breakfast or brunch.
