Lettuce wrap, a great and easy option for a low carb snack
Lettuce wrap: Method
- Using a potato peeler, peel the cucumber, then slice it into round circles.
- Wash and dry the salad and gently remove the leaves. Make a vertical cut about 7 or 8 cm long at the center of the base.
- Divide the leaf into four quarters and place a square of feta cheese seasoned with oregano on the first quarter. Put a peeled tomato cut into strips and sprinkled with salt in the second quarter, a few slices of cucumber in the third, and a small tablespoon of olives in the fourth quarter.
- Starting from the first quarter with the feta, close the leaf upwards, then close it to the right, then finally close everything over the last quarter.
- Serve the lettuce wrap on a bed of rocket and sliced carrots and season with oil, salt, and pepper.
