  • Jam
  • 400 g Mutti® Cherry Tomatoes
  • juice of 1 organic lemon
  • dl ¾ of jam sugar
  • ½ vanilla bean
  • Scones
  • 3 dl ½ wheat flour or multigrain flour
  • 1 dl porridge flakes
  • 1 tbsp sugar
  • 1 ts salt
  • 2 ts baking powder
  • 75 g room temperature butter or margarine
  • 50 g grated cheese
  • 2 dl cold milk
  • 1 dl finely chopped mixed herbs (basil (chervil, thyme)

Cherry tomato jam with herb scones: Method

  1. Start with the jam: Put the ingredients in a saucepan, heat and let boil for 5 minutes, giving the pan a gentle shake from time to time. Let cool and put in a jar.
  2. Scones: Mix the dry ingredients, softened butter or margarine and grated cheese in a bowl. Add the milk and herbs and mix to make a dough.
  3. Sprinkle flour onto the work surface. Turn the dough onto the surface and pat out until about 2.5 cm thick. Use a cutter to stamp out ø 4 cm scones. Place them on a baking tray covered with parchment paper.
  4. Bake in an oven preheated to 200 degrees for 20 minutes.
  5. Serve the scones warm with the cherry tomato jam. Bacon and mozzarella are also great accompaniments
