Ingredients

  • 600 g Mutti Cherry Tomatoes
  • 100 g liquid vegetable cream
  • 1 white onion
  • 1 head of garlic
  • 2 sprigs of marjoram or a few basil leaves
  • 75 g vegetable broth or hot water
  • 1/2 Baguette
  • parmesan cheese
  • salt
  • pepper

Method

  1. Cut the onion in two and divide the garlic head in half, lengthwise.
  2. Pour the Mutti Cherry Tomatoes, onion and garlic into a pan. Then add the oil, salt, pepper and marjoram.
  3. Bake in the oven for 20 minutes at 200°, possibly turning on the grill for the last few minutes.
  4. Slice the bread, place the slices on a baking tray, sprinkle with extra virgin olive oil, salt, pepper and grated Parmesan cheese. Toast in the oven at 200° until golden brown.
  5. Transfer the tomatoes to a blender. Make sure to remove peel the garlic at this stage.
  6. Use half a head of garlic or all according to taste.
  7. Add the vegan cream, adjust the consistency with the vegetable broth and blend together for 1 minute.
  8. Transfer the soup into bowls, pour a spoonful of vegetable ream, a drizzle of oil, pepper, a few basil leaves and serve with croutons.
