Vegan Minestrone Recipe with Tomato Paste: Method
- Gently cook onions and garlic in olive oil until softened.
- Add celery, carrots and potato. Cook for a few minutes.
- Stir through Mutti® Organic Double Concentrated Tomato Paste and cook for another few minutes.
- Add dried oregano, salt and pepper.
- Stir in Mutti® Organic Diced Tomatoes and break up with a spoon. Pour in 6-8 cups of boiling water.
- Simmer mixture until potatoes are soft.
- Add spaghetti and cook until al dente.
- Mix in beans, zucchini and broccoli. Add more water if needed to achieve your desired consistency.
- Serve this delicious easy vegan minestrone soup.
