Ingredients

  • 1 can Mutti® Cherry Tomatoes
  • 1 red pepper
  • 2 shallots
  • 2 Tbsp extra virgin olive oil
  • 1 Tbsp balsamic vinegar
  • 1 bunch fresh basil
  • salt

We chose to top our grilled chicken and pepper skewers with this sweet, rich relish!

Method

  1. Preheat grill to 375-400 degrees.
  2. Drain tomatoes. In a bowl, drizzle olive oil over the tomatoes, the whole red pepper, and the shallots making sure they are completely coated. Season with salt and pepper.
  3. Grill the veggies for 3-5 minutes on each side. (You may need to use a grill pan for the tomatoes.) Remove from heat just as the tomatoes start to burst.
  4. Place the pepper in a covered bowl to cool for about 3 minutes. This will make it easier to remove the skin.
  5. Once cooled, dice the skinned pepper and shallots.
  6. Combine the tomatoes, pepper, shallots, basil, and vinegar in a bowl. Season with salt, and use liberally to top grilled meat or other proteins.
