Ingredients

  • 2 carrots (minced)
  • 2 pieces of celery (minced)
  • 1 onion (minced)
  • 2 cloves garlic (minced)
  • 2 potatoes (diced)
  • 2 zucchini (diced)
  • 2 bay leaves
  • 3 tbsp EVOO
  • 14 oz Mutti® Peeled Tomatoes (Pelati)
  • 3.5 oz pancetta (fresh bacon)
  • 7 oz lentils (dried)
  • 4 cups water

Lentil Soup with Tomatoes, Vegetables and Bacon: Method

  1. Soak lentils for 2 hours.
  2. Brown all the vegetables with EVOO and the diced bacon (fresh pancetta) for 10 minutes.
  3. Add lentils (drained from water) and bay leaves. Cook for 10 minutes.
  4. Add Mutti® Peeled Tomatoes, mashed. Season with salt and pepper and cook for 1 hour.
  5. Serve with crouton.
