Lentil Soup with Tomatoes, Vegetables and Bacon: Method
- Soak lentils for 2 hours.
- Brown all the vegetables with EVOO and the diced bacon (fresh pancetta) for 10 minutes.
- Add lentils (drained from water) and bay leaves. Cook for 10 minutes.
- Add Mutti® Peeled Tomatoes, mashed. Season with salt and pepper and cook for 1 hour.
- Serve with crouton.
