Ingredients

For the nuggets

  • 500 g chicken breast, cut into nugget size
  • 2 cups honey corn flakes, crushed
  • 2 eggs, whisked
  • 1 cup flour
  • Olive oil spray

For the tomato relish

  • 2 tins 400g Mutti Polpa Finely Chopped Tomatoes
  • 1/2 brown onion, chopped
  • 1/2 cup brown sugar
  • 3 tablespoons apple cider vinegar
  • 1 teaspoon cayenne pepper
  • 3 teaspoons mustard powder
  • 2 teaspoons onion powder

Honey chicken nuggets with tomato relish: Method

  1. Whisk eggs and set aside in a bowl. Crush corn flakes in a separate bowl. In a third bowl, add the flour.
  2. Place a piece of chicken in the flour, then coat with egg and the cornflakes. Repeat till all chicken has been coated.
  3. Place on a baking tray and spray the chicken nuggets with olive oil spray. Place in a pre-heated over on 180c for 20 minutes.
  4. To make the tomato relish, use a non-stick pot and place on a medium heat. Add all the ingredients for the relish and bring to a simmer.
  5. Cook down for approx. 30 minutes or till thickened. Use a stick blender and blend till desired consistency. Allow to cool and serve with nuggets.
