Tacos with Avocados and Apples

Tacos with Avocados and Apples

Made with Tomato puree

Mutti® Tomato Puree (Passata) is sun-ripened 100% Italian tomatoes transformed into sweet velvety puree with just a touch of Mediterranean sea salt. After eliminating the skin and seeds, the tomatoes are pureed to achieve a smooth, luxurious texture while maintaining their bright red color and naturally sweet flavor. Fantastic in marinara sauce, tomato soup, or even a Bloody Mary.

Tacos with Avocados and Apples: Method

  1. Put the oil in a large saucepan placed over a low heat. Add the onion, carrot, red pepper, cumin, cinnamon and sugar and cook for 10 minutes. Increase the heat, add the pork and cook until browned, breaking up any large pieces.
  2. Meanwhile, put half the coriander, the garlic, green chilli, smoked paprika, chipotle paste, vinegar and lemon zest in a food processor. Blend, while slowly pouring in just enough water to create a paste.
  3. Add the paste to the pork and stir in Mutti® Tomato Puree (Passata). Bring to the boil. Reduce the heat to a simmer and cook until the liquid has reduced by at least half. Season with salt and pepper and add the lemon juice and remaining coriander.
