Ingredients

  • 1 lb spicy Italian sausage
  • 1/2 onion diced
  • 3 cloves garlic (minced )
  • 2 tsp Italian seasoning
  • 1 tsp salt
  • 1/2 cup chicken stock
  • 28 oz Mutti® Crushed Tomatoes (Polpa)
  • 24.5 oz Mutti® Tomato Puree (Passata)
  • 1 tbsp Mutti® Double Concentrated Tomato Paste (Doppio Concentrato)
  • 1 lb frozen gnocchi
  • 1/2 cup cream
  • 1/2 cup grated Parmigiano Reggiano Cheese (plus more for garnish)
  • 2 cups fresh spinach
  • 1/2 cup fresh basil (chopped)

Spicy Sausage and Gnocchi Soup with Tomatoes: Method

  1. Remove sausage casings from 1 lb spicy italian sausage. Add to instant pot on browning mode. Cook until browned.
  2. Add ½ onion diced, 3 cloves garlic and stir.
  3. Add 2 tsp Italian seasoning, 1 tsp salt, 1/2 cup chicken stock, 2 cans of Mutti® Crushed Tomatoes (Polpa) and 24.5 oz Mutti® Tomato Puree (Passata).
  4. Add 1 tbl Mutti® Double Concentrated Tomato Paste (Doppio Concentrato) and 1 lb frozen gnocchi and press down on the gnocchi slightly until they’re just covered by the sauce.
  5. Place lid on Instant Pot and move to the sealed position. Cook on high for 1 minute. Do a quick release and add ½ cup cream, ½ cup grated parmesan and stir to combine.
  6. Add 2 cups fresh spinach and ½ cup chopped fresh basil and stir until spinach has wilted. Plate and serve with grated Parmigiano Reggiano!
