Ingredients

  • 1 lb Italian sausage
  • 2 tbsp olive oil
  • 3 cups Mutti® Tomato Puree (Passata)
  • 1 tbsp Mutti® Double Concentrated Tomato Paste (Doppio Concentrato)
  • 1 1/2 cups yellow onion (diced)
  • 1 1/2 tbsp garlic (minced)
  • 1 whole green bell pepper (diced)
  • 1 large carrot (diced)
  • 3 1/2 cups low-sodium broth
  • 1 1/2 lb red potatoes (cubed)
  • 1 1/2 tsp dried oregano
  • 1 tsp dried basil

Tomato Potato Soup made with Tomato Puree: Method

  1. In a large skillet, heat oil. Cook sausage and onion over medium-high heat for 4 minutes. Add diced green bell pepper and carrot, stir for 2 minutes. Add Mutti® Double Concentrated Tomato Paste (Doppio Concentrato), dried oregano, basil, and garlic, and stir for about 2 minutes.
  2. Add Mutti® Tomato Puree (Passata), broth, and potatoes. Bring to a boil then lower the heat. Simmer, uncovered, for about 20- 25 minutes or longer until the potatoes are tender. Taste, adjust with salt/black pepper, or add more broth if needed.
