Savoury Tomato Pancakes with salmon and goats cheese fondue

Savoury pancakes are as delicious as sweet ones. This tomato version, with salmon and goats cheese, is going to make your mouth water.

For the base

  • 180 g 00 type flour
  • 5 g baking powder
  • 250 ml milk
  • salt
  • 2 eggs
  • 60 g Mutti Double Concentrated Tomato Paste

For the topping

  • 200 g Smoked salmon
  • 150 g Goats cheese
  • 150 g Soft goats cheese
  • 50 g milk
  • 20 g cream
  • dill

  1. In a bowl, beat eggs and milk. Add sifted flour and baking powder and mix until smooth.
  2. Add the Mutti doubble concentrated tomato paste and mix.
  3. In a second bowl, whip egg whites. Add them slowly in the first bowl.
  4. In a skillet, add a little of butter. Pour a ladle of the pancake mixture in the hot skillet. Cook it on both sides without letting it brown too much.
  5. In a saucepan add the goats cheese, the milk and the cream. Heat it until it starts to boil and keep mixing. As it starts to thicken, it's ready.
  6. In a plate, spread some soft goats cheese, put some smoked salmon on top and add the goats cheese fondue. Season with dill.
