Vegan Burger with Tomato Paste

It looks like a hamburger, in reality it is a vegan burger prepared with beans, cereals and Double Concentrated Tomato Paste which make it colorful and even tastier.

Ingredients

  • 240 g drained cooked cannellini beans (drained cooked cannellini beans)
  • 2 tblsp Mutti Double Concentrated Tomato Paste
  • 100 g Cooked basmati rice
  • 1 tsp Paprika
  • 1 Cloves of garlic
  • 2 tblsp extra virgin olive oil
  • 2 tblsp breadcrumbs
  • salt
  • pepper
  • Hamburger buns, olives, 3 mushrooms, salad

For the vegan mayonnaise

  • 1/2 glass unsweetened soy milk
  • 1 glass corn oil
  • 1/2 Lemon juice
  • 1/2 tsp Mustard
  • salt
  • Chives

Vegan Burger with Tomato Paste: Method

  1. Pour the boiled cannellini beans into a blender, add the crushed garlic, rice and blend.
  2. Transfer the mixture to a bowl, add the salt, paprika, pepper and Mutti Double Concentrate Tomato Paste.
  3. Stir with a spoon and adjust the consistency with the breadcrumbs.
  4. In a 25 cm diameter ring pan, put a few tablespoons with the help of a round pastry cutter, shape the burgers.
  5. Prepare the vegan mayonnaise by putting the soy milk in a jug, adding the mustard and oil slowly while blending with an immersion blender. When it is whipped, add the lemon juice and salt, decorate with the chives.
  6. Cook the burgers in a non-stick pan with a drizzle of oil, turning them on both sides. It will take about 6/8 minutes of cooking.
  7. Also cook the sliced mushrooms together with the burgers, turning them on both sides.
  8. Prepare the sandwich with the salad, vegan mayonnaise, burger, olives and mushrooms.
  9. Serve with a salad or fries.
