
Vegan Burger with Tomato Paste
It looks like an hamburger, in reality it is a vegan burger prepared with beans, rice and Double Concentrated Tomato Paste which make it colorful and even tastier.

Vegan Burger with Tomato Paste: Method
- Pour the boiled cannellini beans into a blender. Add the crushed garlic and rice, then blend until smooth.
- Transfer the mixture to a bowl. Add salt, paprika, pepper, and Mutti Double Concentrated Tomato Paste.
- Stir well with a spoon and gradually add breadcrumbs to adjust the consistency.
- In a 25 cm diameter ring pan, add a few tablespoons of the mixture. Using a round pastry cutter, shape the burgers.
- Prepare the vegan mayonnaise by pouring the soy milk in a jug, and add the mustard and oil slowly while blending with an immersion blender. Once thickened, stir in the lemon juice and salt. Garnish with chopped chives.
- Cook the burgers in a non-stick pan with a drizzle of oil, turning them on both sides. It will take about 6/8 minutes of cooking.
- At the same time, cook the sliced mushrooms in the same pan, turning them occasionally until tender
- Assemble the sandwich with salad, vegan mayonnaise, the burger, olives, and mushrooms.
- Serve with a side of salad or fries.
