Detox Red Lentil Soup with Mutti’s Tomato Polpa : Method
- Peel and chop the carrots and onion. Use a vegetable peeler to remove some strips from the celery stalk to eliminate the fibrous parts, then chop it.
- Place the chopped vegetables in a large pot, add 4 cups of water, and season with salt. Cover with a lid and cook for 20 minutes.
- Rinse the red lentils thoroughly and drain them. Add the lentils and Mutti Polpa to the pot, then continue cooking for an additional 40 minutes.
- Once cooked, grate the ginger and add it along with the turmeric. Blend the soup with an immersion blender until smooth.
- Serve with your favorite fresh herbs for garnish. We’ve used chives and thyme for a fragrant touch.
