Made with Polpa

Mutti Polpa keeps all the freshness of freshly picked tomatoes. This unique product combines the finely cut pulpy part of the fruit with its own juice.

Ingredients

  • 1 cup quinoa
  • 150 g sliced zucchini
  • 1 tablespoon turmeric powder
  • 200 g diced pumpkin
  • 100 g salad greens, coriander
  • 200 g smoked chicken breast
  • 1/3 cup Mutti Polpa Finely Chopped Tomatoes
  • 1 tablespoon of hummus
  • 2 teaspoons olive oil
  • Coriander and freshly ground black pepper

Method

  1. Pre-heat the oven to 180 °C.
  2. Drizzle olive oil over pumpkin and roast in the oven until tender.
  3. Heat a pan over medium heat. Stir-fry zucchini with turmeric and olive oil. Set aside.
  4. Cook chicken breast on the stove top, searing both sides until golden brown and cooked through.
  5. Cook quinoa as package suggests.
  6. Add cooked pumpkin, quinoa, zucchini, smoked chicken breast, salad greens, Mutti Polpa Finely Chopped Tomatoes and hommus in a bowl. Top with coriander and black pepper.
