Ingredients

  • 14 oz Mutti® Crushed Tomatoes (Polpa)
  • 19 oz Fresh Pineapple (finely diced)
  • 1 Birdseye chilli (finely chopped )
  • 4.2 oz onion (finely diced)
  • 4 cloves garlic (crushed)
  • 1 tbsp grated ginger
  • 2 tbsp fish sauce
  • 14 oz caster sugar
  • 3 tbsp white wine vinegar
  • 1 tbsp chopped mint

Method

  1. Place all the ingredients into a deep, heavy-based saucepan.
  2. Bring to the boil slowly, stirring as you go. Once it comes to the boil, turn down to a simmer and cook gently for 50 minutes until the mixture thickens to a lovely thick consistency.
  3. Decant into warm sterilised jars and seal the pineapple tomato relish.
