Harira Soup

Harira soup is a traditional Moroccan dish, aromatic and full of flavor. It is very easy to prepare and perfect for sharing with the whole family during the colder months.

Made with Crushed tomatoes

Ingredients

  • 28 oz Mutti Polpa - Crushed Tomatoes
  • 1 generous tablespoon Mutti Double Concentrated Tomato Paste
  • 14 oz pre-cooked chickpeas
  • 1/2 cup dried lentils
  • 1 onion
  • 1 celery stalk
  • 1/2 cup fresh cilantro
  • 1/2 cup parsley
  • 1 teaspoon turmeric
  • 1 teaspoon ground ginger
  • 1/2 lemon
  • as needed Vegetable broth or water
  • 3 tablespoons extra virgin olive oil
  • t.t. salt
  • t.t. pepper

Harira Soup: Method

  1. In a large pot, gently sauté the finely chopped onion and celery, then add the lentils and let them toast for a few minutes.
  2. Now add the Mutti Crushed Tomatoes and the Tomato Paste, the chickpeas, the spices, and the chopped cilantro and parsley, and mix well.
  3. Add salt and pepper to taste, then pour in enough vegetable broth or water to just cover the soup.
  4. Cover with a lid and cook over low heat for at least one hour, stirring occasionally.
  5. Once ready, add the juice of half a lemon to the soup and mix well.
  6. Serve the harira soup garnished with a few cilantro leaves and lemon slices.
